The BEST Candied/ Candy Yams!!

As a child I wouldn’t touch a candied yam not even with a long handled spoon. YUCK! LOL  My face along with my sisters in the photo expresses how we felt about yams. I was probably thinking, “Thanksgiving dinner should be rolls, mac and cheese, ham and dessert!”  I’m not a marshmallow fan, so seeing a bunch of marshmallows on top of yams didn’t make matters any more appetizing  for me.

My mom got rid of the marshmallows and (nutmeg) hehe and here we have the BEST recipe for candied/candy yams. I was well into my twenties before my palate changed and said “WOWZERS!” Maybe it was my palate or maybe it was my mom changing her recipe.

Ingredients
2-4 Yams depending on the size (you can also use sweet potatoes)
1 stick of butter
1 cup brown sugar
1 cup dark karo syrup
1/2 teaspoon ground cinnamon
1 teaspoon vanilla
1/2 small lemon for its juice
Put Yams in a large pot and fill with water until the yams are covered. Bring yams to a boil let them boil for about 15 minutes, check with a fork the tenderness, (you can stick the fork into the yam but the yam should not be mushy) once you get the desired tenderness remove from water and set to side to cool off
Once yams have cooled, peel the skin off of them
Now for the candy
In a pot or pan
-mix butter and brow sugar… mix well
-add the karo syrup and mix
-add cinnamon and vanilla and mix
then add the juice from the lemon
pour glaze (candy) on your sliced yams and put in the oven at 400 degrees for 15-20
minutes

    Ummmm, ma’am, I used to LOVE the candied yams with the nutmeg and the marshmallows! LOL! Today, I don’t do marshmallows, but trust and believe, that nutmeg is in it! Hence why I’m not in the picture, LOL! My face probably had a smile on it!

  2. Awww, I was wondering where Joy was! The two of you look so sad!! Well, I’m not a nutmeg fan either… (something about the flavor it slightly off putting to me), but THESE yams look delicious!! Can’t wait to try some of these recipes, Faith. It’s time to bring real food back to our tables. Reading your blog has certainly inspired me today… Thank you for being here when I was ready to “come home”.
